Quark

Since this post was scheduled to publish today I thought I would add an update. Quark is a food I had not heard of before moving to Germany. It is a dairy product somewhere between cream cheese and yogurt and can be substituted in recipes that call for those ingredients. It is super high in protein and available in the states in health food stores.

I have mixed it with fresh fruit such as peaches or raspberries as a spread for crackers. It is often used in cakes similar to cheese cake. In the above photo quark was used as the creamy ingredient in the vegetable sauce. I mixed chopped broccoli, a chopped onion, peas, corn, chopped spinach, quark, water and spices (salt, pepper, cumin, paprika, parsley, corriander, and dill).

Here in the hospital quark is frequently served. Just like yogurt it comes in flavors. Plain, herb and fruit flavors are the most popular. It comes in small single serving containers about twice the size of a packet of jam. Some people spread it on bread and some just eat it from the container with a spoon.

  1. what a funny name! I haven't heard of that over in England. But we do have Quorn which is a meat substitute. I will have to look for it and give it a try.
